Pesto party: everyone is invited


First is the worst, pesto is the best, third is the one with the trea-sure-chest! ...and it's filled with pesto. Because pesto is treasure.

Cool so let's make some.

What you need:

- Fresh basil leaves

- Pine nuts

- Garlic

- Lemon juice

- Olive oil

- Salt + pepper

possible add-ins: parsley (flavor bump), kale (bulk it up, protein party)

Don't have pine nuts? Or refuse to buy them because they're kind of pretentiously priced? Feel that. Use cashews or walnuts instead.

What you do:

- Add ingredients to food processor

- Pulse or press away until you receive the desired consistency

*For a smoother consistency, add more olive oil or tiny amounts of water

Approximate measurements:

- 2-3 cups basil (slightly packed)

- 1/3 cup pine nuts

- 2 cloves garlic

- Juice of 1 medium/small lemon or 1/2 large

- 1/4 cup olive oil

You can technically make this sans-food-processor, but it will take a while to chop and will of course be a lot less smooth. But hey, if you're topping bread with this stuff rather than stirring it into pasta, a little chunkiness won't hurt!
